These bean burgers are great with a side salad or on a bread roll with lettuce. After baking them, you can also freeze them for later use!

Ingredients

Instructions
  1. Make sure you have all the ingredients at hand. If you are using beans from a tin or jar, make sure that they are drained well.
  2. Roughly mash the beans or blend using a food processor. Around 80% of the beans should be mashed, the rest can stay whole.
  3. Cut the ginger, chilli pepper, garlic and coriander leaves very very finely, or use a kitchen-machine.
  4. Cut the spring onions and put them in a big mixing bowl together with the spices and stir around.
  5. Cut the avocado's in small pieces and add them to the mixture. Also add the lime juice and the soy sauce. Stir through until you get a smooth paste.
  6. Now add the beans and the corn and mix everything thoroughly.
  7. Divide the mixture into equal parts of the size you require and shape into burgers.
  8. On a plate, spread some flour and ground fresh black pepper over it. Put the burger on the plate, turn around and make sure it is coated all around.
  9. Now bake the burgers for about 3-4 minutes on each side.
