Transform a bag of onions into a delicious and hearty soup with this simple and classic recipe. Using very few ingredients you'll create a filling and healthy meal!

Instructions
Make sure you have all the ingredients at hand.
Cut the onions in thin slices. Melt the butter in a pan and add the onions. Bake them slowly on low fire for at least 30 - 40 minutes, stirring around every now and then.
The onions reduce in size and should obtain a light golden brown colour, this means they start to caramelize. Patience is the key!
Coarsely cut the garlic and add it to the onions, sauté for a couple of minutes, then add the flour and keep stirring around until it has evenly spread out.
Keep on stirring while you add the wine and the stock.
Also add the bay leaves and thyme sprigs. Now put the lid on the pan and bring the soup to boil.
Lower the heat and let the soup simmer for 20 minutes. Remove the bay leaves and thyme sprigs and add salt and pepper to taste.
Serve the soup the traditional way with a slice of toasted bread with melted cheese on top. Or just eat it on its own!
